Jamaican Jerk chicken

Ingredient :
4lb chicken
4oz escallion
4 Oz thyme
Salt to taste
4oz onion
3 garlic
1 hot pepper
3oz ginger
1 lime
2oz Pimento seeds
4oz Grace jerk chicken
1 bottle Vinegar
2 tablespoon brown sugar
Preparation and jerking:
1. Wash chicken with lime juice and put to drain.
2. Cut ginger, onion, thyme, garlic, hot pepper, pimento seeds.
3. Combine all cut ingredients and jerk season, brown sugar and blend for 4 minutes.
4. Rub into chicken and marinate over night.
5. Place in the rest of season mixture, covered and put in refrigerator.
6. Grilled on hot grill for 35-45 minutes.
7. Your jerk chicken is done!
